Architecture of Flavor

AoF Kitchen

AoF Kitchen

A great dish is more than good ingredients behaving themselves. It’s knowing what belongs, what doesn’t, and what the diner expects before the first bite. History creates memory. Memory creates expectation.

Then come flavor, aroma, color, temperature, texture, fracture and time—what hits, what blooms, what lingers, and what gets in the damn way. AoF Kitchen attempts to make some sense of all this, armed with an unreasonable amount of science and the dangerous belief that food can be understood.

Then you cook it, taste it, and teach us where we were wrong. The plate gets the last word.
